Teachers Externship Program

In 2007, TRAEF launched the Teacher Externship Program. This program connects teachers with local restaurants and sets up a summer four-week externship. The teacher works in all aspects of the restaurant – front of the house, back of the house and management – to gain increased understanding of and appreciation for the operations of a restaurant. The restaurant pays the teacher a minimum wage and the TRAEF provides a stipend. This is a wonderful opportunitity for teachers as one participant from Dallas noted:
"I just wanted to let you know I completed my 4 week externship at Mi Piaci's here in Dallas. It was the best experience and I had a great time. I learned so much that I can take back to the classroom. The kitchen staff, under the direction of Chef Carlos Fuentes, were wonderful and very welcoming. I can't thank you enough for the opportunity."
