Academic Programs The TRAEF offers several educational and innovative programs to build pathways from schools to careers in the foodservice industry. These programs are available to school districts across the state.

FS Prep The FS Prep Instructional Resource is a two-year comprehensive culinary and foodservice instructional resource including daily lesson plans, PowerPoint presentations, lab and lecture guides, supplementary materials, tests and quizzes all in modular and electronic format. Now in its 3rd edition, FS Prep is the standard for culinary curriculum in Texas and is used in more than 70 schools across the state.  

Entrepreneur 101 The Entrepreneur 101 (E-101) program is a high school program that utilizes a school-based restaurant to teach students entrepreneurial skills. As part of the E-101 program, students will undertake responsibility as the owners and operators of this business with assistance from experienced business professionals and educators.  

ServSafe  ServSafe is a nationally recognized food safety program developed by the National Restaurant Association Educational Foundation, providing high-quality safety education and training for the restaurant and foodservice industry.

Making the Transition The Making the Transition guide  provides school districts with a comprehensive guide to enhancing current Nutrition & Food Science programs and/or transition to a Culinary Arts or Food Production programs. The guide is free to schools.

ProStart ProStart is a pioneering school-to-work program that introduces high school juniors and seniors to the foodservice industry, teaching the basic skills they need to succeed in business. During the two-year program, students experience a dynamic, comprehensive curriculum coupled with on-the-job work experience and mentoring in local restaurants.
